Follow up to Inspection Report # MBEK-DC222C.
High temperature dishwasher has been replaced. Dishwasher measured 72 degrees C at the utensil surface during the final rinse (required: 71 degrees C or more at the utensil surface). As a reminder, ensure dishwasher is being monitored daily for minimum temperature requirements. Refer to dishwasher specification plate for details (e.g. 180 degrees F or more required for rinse).
Pork hocks are being frozen, then defrosted in the walk in cooler or microwave. Note: A small quantity of pork hocks (frozen) available in walk in cooler at time of inspection.
No raw meat observed to be stored above ready-to-eat foods at time of inspection.
All sanitizer bottles are labeled and contain bleach water sanitizer at 100 to 200 ppm chlorine.
Premises cleaned/sanitized since previous inspection. Most holes/gaps sealed, however, a few more were identified during the inspection--to be sealed against pest entry.
