302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer solution was hooked up to the low temperature dishwasher at the start of the inspection. There were two detergent and one "shine pro" solution buckets that were connected to the dishwasher. The operator immediately replaced one of the detergent solution buckets with the designated chlorine sanitizer bucket. The dishwasher was then able to achieve 50ppm Chlorine.
Corrective Action(s): Rewash all dishes and utensils by running them through the dishwasher prior to using.

Observation (CORRECTED DURING INSPECTION): Handwash station in the kitchen area did not have paper towel or liquid soap in a dispensable bottle. Operator was notified and directed staff, who immediately filled the paper towel dispenser with paper towels and filled a pump action bottle to dispense liquid soap.
Corrective Action(s): Ensure all hand wash stations are fully equipped with liquid soap, paper towels, and hot/cold running water.

Observation (CORRECTED DURING INSPECTION): Dry storage containers were covered in flour and food debris. The operator was notified and he directed staff to wash and sanitize the area. He also asked the staff to change the containers completely
Corrective Action(s): Ensure the food storage areas are cleaned frequently to avoid build-up of food debris

Routine inspection conducted alongside Operator.

-After correction, all hand wash station were equipped with liquid soap, paper towels, and hot/cold running water
-Walk-in cooler and prep cooler were measured at 4C
-All freezer units were at or below -18C
-No hot holding was observed during the inspection
-Ice Machines were observed to be clean
-No signs of pest activity. Pest traps are placed throughout facility
-Permit was displayed
-Staff with FOODSAFE Level 1 was onsite

No signature required due to COVID-19
