Observation: 3 door upright cooler measured 9.8°C at time of inspection. Operator stated unit gets warm during day as unit door is opened and closed frequently.
Corrective Action(s): Adjust unit to a lower temperature to ensure product can maintain temperatures of 4°C or less.

Temperatures:
Upright display cooler (New air): 3.8°C
Display cooler (Efi): 3.7°C

3 door upright cooler (McCall): 9.8°C
Unit heavily used as staff was preparing cakes during inspection.
3 door upright cooler (QBD): 0.7°C
2 door undercounter cooler (Masterbilt): 1.0°C
3 door undercounter cooler (True refrigerator): -1.6°C
Walk-in freezer: -10.2°C

Sanitation:
Handwashing stations equipped with hot/cold running water, liquid soap and paper towels.
High temperature dishwasher measured 75.5°C at time of inspection.
3 compartment sink on site.
SanQUAT 200ppm available from chemical supplier, however test strips did not detect QUATS. Operator stated they will discontinue use of this product.
Bleach sanitizer measured 100ppm.

Storage:
All food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.
