Observation (CORRECTED DURING INSPECTION): Bag of crumbled bacon (stored in walk-in freezer which was not working) was 10-12C measured with probe thermometer.
Corrective Action(s): Product was discarded by Manager at the time of the inspection.

Observation (CORRECTED DURING INSPECTION): Foods intended to be frozen which were in the walk-in freezer were in the process of thawing. Temperature of foods was -2.6C (wieners) to 12C (crumbled bacon)
Corrective Action(s): Food which was >4C was discarded. Food which was <4C was transferred to coolers. This food must not be refrozen. Food has been labelled with date indicating when it must be used up.

Observation: Walk-in freezer was 8C. Frozen foods were in the process of thawing. Manager reported unit was serviced the day prior.
Corrective Action(s): Repair or replace walk-in freezer so that it is able to maintain a temperature of -18C or colder. Do not store any food in freezer until it is in good working order. Repair/replacement must be completed by correction date stated as there is insufficient refrigeration/frozen storage capacity to accomodate foods needed to allow premises to continue to operate beyond timeframe provided.

Comments

-General sanitation of premises was satisfactory
-Hot and cold running water available
-Handsink was supplied with liquid soap and paper towel
-Wiping cloth stored in quats sanitizer solution
-Potato slicer cleaned and sanitized after each use
-Under counter cooler was at 4C
-Stainless cooler was at 3C
-Thermometers present in coolers. Foods temperatures being monitored and recorded. Recommend monitoring temperatures of coolers and freezer also.
-No signs of pest activity noted at the time of the inspection.
