Observation (CORRECTED DURING INSPECTION): Sanitizing solutions in buckets were too weak; less than 50 ppm QUAT detected. Operator stated that sanitizing solution is changed every 1 hour.
Corrective Action(s): Replenish with new sanitizing more frequently or when needed.
Ensure it is at least QUAT 200 ppm or as per manufacturing instructions.

Observation (CORRECTED DURING INSPECTION): In the front area, the freezer was -1C. Some foods were thawed and some foods were in frozen state.
Operator stated that request was made to repair it.
Corrective Action(s): Relocate frozen foods into a functioning freezer. Use the food that has been thawed.
Store frozen foods in this freezer only when it is repaired and can maintain -18C or below.

Front Area
- Handwash station was equipped with hot/cold running water, soap, and paper towels
- Staff was observed to wash their hands
- Drain board for air drying blenders did not have pooling water and racks were placed on the boards to elevate the blenders to prevent contamination by potential pooling of water; drainage issue was rectified.
- Under compartment cooler unit for hot dog topping 3C
- Cheese for hot dog topping was 3.8C
- Hot dog hot held at 68C
- Meat topping hot held at 65C

Side Area
- Cake topping under compartment was 3C
- Handwash station was equipped with hot/cold running water, soap, and paper towels
- Stand up freezer was -13C and Master-Blit freezer was -18C

Back Area
- Walk-in cooler was 3C
- Three compartment sink; sanitizing solution in dishwashing sink was 400 ppm
- Garbage bin was covered
- Stand up freezer was -15C

***Recommend to place a garbage bin near the handwash station to encourage staff to wipe hands with paper towels after washing their hands.
***Do not use milk crates as shelving. It is difficult to maintain cleanliness.
***Repair the rubber fitting that is peeling off the ice machine lid in the back area.
***Check and record temperatures accurately for potentially hazardous foods
