Observation (CORRECTED DURING INSPECTION): There was no surface sanitizer in the main kitchen.
Corrective Action(s): The operator prepared surface sanitizer in bucket with presoaked wiping cloths at 100 ppm chlorine solution. Ensure to have surface sanitizer available at all times to clean and sanitize food contact surfaces (ie prep tables). Wiping cloths must be stored inside the sanitizer solution when not in use.

Observation: 1) Multiple food items stored uncovered inside the upright cooler (near the gate).
2) Dry food item stored uncovered near the back.

Observation: Temperature log is not maintained and kept up to date. The latest log was done in February 2017.
Corrective Action(s): Ensure to start temperature log for all coolers and freezers and keep up to date. Keep records for three months and make them available for review by the health inspector.

Observation: Cardboard being used on floors.
Corrective Action(s): Remove the cardboard from the floors. Use rubber mats instead as cardboard is not approved to be used in the kitchen and may contribute to poor sanitation.

Comments

- General sanitation is satisfactory. The paint on the floors is peeling off. Repainting of the floor may be required soon.
- All coolers (walk in, upright) < or = 4C.
- All freezers (walk in) < or = -18C.
- Two compartment sink available for manual dishwashing. Do not store any dirty equipment, dishware, and utensils inside the sanitizing compartment of the sink.
- Dry storage area is satisfactory.
- Food items are covered with proper lids.
- No signs of pest activity. The pest control company (Canadian Pest Control Ltd) report shows no signs of pest activity during the inspection.
- FOODSAFE certified staff working on duty.
