Corrective Action(s): Install towel dispenser asap. The dispenser is to be mounted at a convenient location, easily accessible by all staff.

Comments

- Temperature Control: No concerns. Monitoring required. Temperature gauges are to be kept securely fastened inside all refrigeration units, easily to view, for staff monitoring.
- Mechanical Dishwasher: High temperature = Ok.
-> Wiping cloth storage discussed. Limit quantity of cloths stored on prep lines. Cloths used on food contact surfaces are to be stored, completely submerged, in a sanitizer at all times. Monitoring of solution concentration required.
- Food Storage: Ok. Storage areas are to be kept clean and organized at all times. Items are to be kept stored off of floors.
- Chemical storage: Ok.
- Sanitary Facilities: Refer to Violation notes.
- Staff hygiene: Reviewed and discussed.
- Sanitation: Maintain routine cleaning schedules.
- Ice bin cleaning and disinfection discussed.
- Meat slicer cleaning and disinfection discussed.
- Garbage/Recycling/Composting Storage: Items to be kept stored in covered, rodent proof containers. Area is required to be kept clean and organized.
- Pest Control: Monitoring required. Exterior Door sweeps are to be adjusted on the garbage room doors, to prevent pest entry.
