Observation: Rolling latch located on top of the walk-in cooler door is not currently working properly and needs to be manually reset every time the door is opened. This causes the door to be left slightly open for extended periods of time, raising the temperature of the cooler.
Corrective Action(s): Fix within one month.

Comments

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
3-compartment sink dishwashing is in use. The third sink had 200 ppm quats inside.
Quats sanitizer was at 200 ppm in buckets.
No evidence of pests, traps were in place.
Food is stored in pest proof containers.
The ventilation hood was clean.
General sanitation was satisfactory.
