Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (Sani-buckets for spot sanitizing not available (sometimes used?) and no sanitizing spray bottle on hand for spot sanitizing. )
Comments

Sani buckets in use, sanitizer sink in use and spray bottles in use. Concentration between 50 and 100 ppm chlorine. Recommend increase that range to 100 to 200 ppm and change the sani-buckets every two hours, spray bottle every couple of days.
**Make sure the spray bottle is clearly labelled for bleach use (not quats).
