-Temperature logs now available for all coolers and upright freezer: ensure to maintain these records daily as verification that all your equipment is functioning properly
-Cleaning has improved in/underneath and around the cooking line
-All prep coolers operating at <4 deg C with exception of the prep cooler outside the walk in cooler that had 6-7 deg C ambient temperature in the bottom compartment. No potentially hazardous food is stored inside this one. Head chef indicated that it was recently adjusted. If upon further checks this bottom compartment of your cooler is not able to consistently maintain <4 deg C, it will need to be serviced
