Observation (CORRECTED DURING INSPECTION): Used sushi rice scoop stored on top of rice container. Ensure rice scoops are stored in ice water bath when not in use OR refer to your facility's corporate Sanitation Plan.
Corrective Action(s): Staff replaced rice scoop with new one and placed other for washing.

Observation (CORRECTED DURING INSPECTION): Soiled knives stored with clean knives in soiled knife holder. Ensure soiled knives are regularly washed and sanitized when not in use; keep knife holder clean.
Corrective Action(s): Staff placed knives and knife holder in high temperature dishwasher to clean.
