Comments

Routine inspection conducted and following were observed:
- Handsinks in sushi bar area, back kitchen area and washrooms are supplied with hot and cold running water, liquid soap and paper towel
- All coolers - prep area, upright storage cooler, domestic cooler, sushi undercounter cooler and display cooler and drinks cooler are measured at less than 4C
- Two chest freezers, upright storage freezer are measured at less than -18C
- Sushi rice is measured at less than or equal to pH 4
- Hot holding unit for rice and miso soup is measured at greater than 60C
- Chemical dishwasher is working and is measured dispensing 50ppm chlorine solution during final rinse cycle
- Ice machine is measured in clean and sanitary condition
- Food contact surface sanitizer is measured at 100ppm chlorine solution in buckets available in kitchen and sushi bar area
- Food storage practices are satisfactory
- No evidence of pest activity is noted at the time of inspection
- General sanitation is satisfactory
- FOODSAFE level 1 of operator is verified, expiry is in Dec 2024.
