Routine inspection conducted by student

- Rice cooked in rice cookers at 6:30 am transferred to white containers and combined with sushi rice vinegar, placed in walk in cooler
-No food handling observed at time of visit.
-Quats 200 ppm,
-Display cooler for sushi <4 oC
-Sushi chef knowledgeable on preventing cross contamination
-Sashimi cut and prepared in a batch
-Full wash /sanitize of surface between cutting of fish, veg, and sushi rolls
-Yellow cutting board used for seafoods
-Ecolab antimicrobial treatment not in use for veg until further information from the area inspector
-Good sanitation
-Hand sink is equipped with hot/cold running water soap and paper towel
