Observation: REPEAT VIOLATION - veggie pakora found "cooling" on racks near walk in freezer at 23C
Corrective Action(s): As discussed in the past, even veggies products must be rapidly cooled. You may briefly air cool after they've been fried, but they must then be transferred to your (functional) walk in cooler.

Observation: Product in walk in freezer thawing out, surface product found at 6C
Products in walk in cooler ranged from 6-8C
Corrective Action(s): Both of these machines under repair at time of inspection
If repairs cannot bring temperatures down to safe ranges within the hour, food must be transferred to your other refrigeration systems (storage rooms, sweet coolers, prep coolers)

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Most products observed in prep coolers and in walk in cooler found without lids.
2) Cardboard box of cut (raw) veggie found on floor.
3) Above cut box of veggie on the floor was moved during inspection to a prep cooler cutting board, contaminating the cutting board for further use.
4) REPEAT VIOLATION - milk crates found in use as food contact surfaces. These are both hard to clean and not designed for cooked/ prepared food product.

Corrective Action(s): 1) If product is not actively cooling, use a food grade food cover to prevent from contamination.
2 & 4) Do not use cardboard boxes or milk crates for food preparation. Use only as intended.
3) If something like a large heavy box had to touch the floor then get transferred to a shelf, wash and sanitize that shelf/ preparation surface prior to use.

Observation: Rodent droppings observed in back storage room and in hot water room.
Chew holes observed throughout these two rooms.
Corrective Action(s): Call your pest control company immediately.
Follow the directions on their report.
Close up all chew and entry holes throughout your facility.

Observation: 3 critical pieces of equipment malfunctioning:
1) Walk in freezer at 6C, after repairs occurring down to -6C. Ensure this machine can maintain a product temperature of -18C or below
2) Walk in cooler 8C
3) Buffet dishwasher not reading any chlorine sanitizer residual. Technician called at time of inspection

Corrective Action(s): Technician on site for cooler and freezer prior to start of inspection.
Technician called for dishwasher at time of inspection.

Use only your kitchen dishwasher until the repair has been verified by your EHO.
As discussed numerous times, you MUST maintain your own equipment. This means monitoring each and every day you are open. Since your last routine inspection, monitoring logs have been again neglected. This is unacceptable given the age and poor record of your equipment.

Please go through each and every violation noted above carefully.
Technician was on site prior to start of inspection. Freezer condenser was overheated - repaired at time of inspection, with temperature coming down to -6C.
Technician removed a paper that had been blocking the condenser unit, and replaced the air curtain at the walk in cooler. Monitor this temperature diligently to ensure it comes down to 4C
A follow up inspection is scheduled for Friday to ensure critical equipment is again functional. Have your sanitation and food contamination issues addressed.
Begin your monitoring logs immediately.

Note: the failing freezer leaked into your front wall (under menu board). This must be repaired to prevent mould growth and pest attraction.
