Observation (CORRECTED DURING INSPECTION): Elastic bands wrapped around faucet of double pot sink at back of kitchen.
Corrective Action(s): Remove the elastic bands from the faucet as they can trap filth and dirt. Faucets are frequently touched surfaces and must be easily cleaned. Operator removed elastic bands.

Observation: Improper storage of organic waste
Corrective Action(s): Organic waste was found to be improperly stored in the organic bin, as organic waste was found on the ground around the bin. Flies and an odor of decaying oganic matter was also noted. Organic waste needs to be stored properly to avoid attracting pests. Clean up the area around the organic bin and increase the organic waste pick up to more than once per week.

Observation: Area behind chest freezer by back door is dirty.
Corrective Action(s): Clean the area behind the chest freezer. Make sure this area is cleaned regularly to prevent build up of filth.

Observation: Spray bottle for bleach sanitizer is broken.
Corrective Action(s): Replace the broken spray bottle so that staff can use it to spray bleach sanitizer on kitchen surfaces.

Comments

General observations:
Coolers were 4 degrees C or less.
Freezers were -18 degrees C or less.
Discussed with operator about keeping the bean sprouts on ice to keep them 4 degrees C or less. Ice needs to be replenished after it has melted.
Food storage practices are generally good.
Storage areas are fairly organized.
Food handler hygiene is satisfactory.
Hand sinks are stocked with liquid soap and paper towels.
General sanitation is satisfactory, except as noted above..
No signs of pests observed in the restaurant.
Low temperature dishwasher had a chlorine sanitizer concentration of 50ppm after the final rinse (as per test strips).
Bleach sanitizer (bucket for wiping rags) was 100ppm.
