*Some rat droppings were noticed on the floor in wine production area. Ensure to clean/sanitize floor and all tanks/equipment prior to starting wine production
in the season.
* Repair the damaged weather stripping on the back loading bay door. Ensure to re-install weather stripping if required to prevent entry of pests.
* All chemicals in spray bottles must be accurately labelled for contents.

"Tubo-charge II"alkali based cleaner is used followed by high pressure rinse to clean the wine tanks and fermentation tanks.
75% alcohol is used for disinfecting small equipment or parts.
Oxonia is used for sanitizing the tanks. Ensure to follow manufacturer's instructions for cleaning and sanitizing.
No food/cheese is offered to customers; the premises is only used for wine making.
Liquid soap and paper towels available at the hand sink.
Dishwasher final rinse: 71 C at the glass surface
Upright coolers < 4 C.
