-Proper bleach sanitizer has been purchased. 100 ppm is achieved in buckets and 50 ppm achieved in dishwasher.
-Hot holding is acceptable
-Knives are not stored in bleach sanitizer solution
-No live cockroaches seen at time of inspection
-Gaps around the pipe have been sealed
-Encrusted debris has been removed
-Pest control reports are to be kept on site at all times
-Reminder that general sanitation is to be maintained at all times
