Routine inspection:
- Coolers (walk-in, display) maintained at 4C or less.
- Walk-in freezer at -18C.
- 200 ppm quats sanitizer available in spray bottle and from the dispenser. Only one spray bottle available in the department. Ensure at least one spray bottle is available for each work station.
- Pan washer registered 71.3C at plate level during final rinse cycle. Educated staff to wait for the wash and rinse temperature to reach the required amount before running the equipment.
- Food storage practices satisfactory.
- Temperature records maintained and available for review.
- General sanitation satisfactory.
