A customer claimed that "a rat has walked over plates".
(The owner of the business sent a picture via email on August 17, 2018.)

General sanitation - satisfactory;
Hand sink supplied with hot water, liquid soap, and paper towels;
Quat sanitizer - available at 200 ppm from dispenser;
Walk-in cooler at 3.2 C;
Walk-in freezer and chest freezer below -18 C;
Food storage practices good - all food covered;
3-compartment sink - satisfactory;
Bulk food is stored in a pest proof food grade containers with lid.
Single use items and utensils stores safely at the time of inspection (off the floor/on shelves/prepackaged)

Reminder not to keep doors open unless there is a screen to prevent entry of pests.
Replace old sticky traps, as they have become covered in mice droppings, dust, and debris.
Check floor/wall junctions and seal if any openings/gaps are found.
