- Walk-in freezer at -18C.
- Prep cooler was at 4C (top and bottom).
- Front customer area cooler was at 3.6C.
- Upright coolers were at 3.2C.
- Thermometers for cold units - available.
- Hot holding (front/soup) - greater than 60C.
- All equipment/utensils stored in a sanitary manner.
- High temperature dishwasher had a final rinse temperature of 76.1C.
- Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Quats sanitizer pails tested at 200ppm. Solution is changed every 2 hours.
