Routine Inspection:
-High temperature dishwasher registered at 74 C on plate surface - good. Discussed how to verify temperature using thermolabels.
**Do not manually dry dishes. Dishes must be air dried.
-Relocation of designated handwashing sink (now using the sink beside the paper towel dispenser). Handwasing sink equipped with hot/cold running water, liquid soap and single use towels.
-Sanitizer bottle available with 400 ppm quats. Store cloths in sanitizer solution as discussed.
-Coolers at 4 C or below.
-Ice machine in clean condition.
-Buffet served near bar. Hand sanitizer and sneeze guard available. Discussed changing or sanitizing utensils frequently.
-Food served on buffet line discarded after 20 minutes as per the chef.
-Buffet/dining hall was not in service at the time of inspection.
