Observation (CORRECTED DURING INSPECTION): Multiple large containers of improperly cooling congee observed. Observed worker place the container in the fridge at the beginning of the inspection -temperature of the congee at 42 deg C and 35 deg C

Operator discarded the congee
Corrective Action(s): Placing that large volume of congee in the fridge will cool too slowly.

You must cool foods FAST:
Step 1:
60 deg C to 20 deg C within 2 hours using small volumes, ice baths and/or cooling wands
Step 2:
20 deg C to 4 deg C place the food in the fridge

Operator to submit the Food Safety Plan for congee menu item -use recipe based format Food Safety Plan for review. Operator indicates multiple cooling wands will be purchased to facilitate this procedure

Do not store knives in unsanitary areas -the area between appliances is not regularly cleaned and sanitized -use your designated knife holders/magnetic wall strips/clean containers instead.
