Observation (CORRECTED DURING INSPECTION): Surface sanitizer in buckets measured 0ppm chlorine bleach concentration. The operator prepared new solution at 100ppm chlorine bleach concentration.
Corrective Action(s): Ensure that all surface sanitizers are at min 100ppm chlorine bleach concentration.

Observation: Exposed walls near the back of the kitchen. The old sinks have been removed.
Corrective Action(s): Patch all exposed walls. Ensure that there is back splash installed at the two-compartment sink and handwashing sink. Materials must be water resistant, non absorbent, and durable.

Observation: - Multiple food items stored inside the coolers uncovered.
- Diced onions in buckets stored directly on the floors.
- Oil in pot stored directly on the floors.
Corrective Action(s): - Cover all food items with plastic wrap or tight fitting lids.
- Store all foods on shelving units or counters above the floor to prevent contamination.

Observation: Significant build up of grease and food debris in the following areas:
- on doors of upright/reaching/prep coolers
- on floors throughout the kitchen
- underneath the sinks
- near prep station
- in dry storage room
Corrective Action(s): Clean up the areas noted above. Implement a regular cleaning schedule, esp in hard to reach areas.

Comments

- General sanitation needs major improvement. See violation section above.
- All handwashing stations (middle/back of kitchen) supplied with hot/cold running water, soap, and paper towels.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Dry storage area has adequate space and wire racks. Dry food items stored min 15cm off the floor.
- No signs of pest activity at the time of the inspection.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers: < or = 4C
- All freezers: < or = -18C
- Thermometers available in all coolers and freezers.
- Daily temperature log must be done and kept up to date.

Note: A new high temperature dishwasher and a two-compartment sink with a drainboard have been installed in the kitchen. No issues noted with the new equipment.
