Observation: Small number of rodent droppings observed near the vent of the dry storage room.
Corrective Action(s): Remove rodent droppings with 1 part bleach, 9 parts water solution. Ensure that you keep all containers with dry storage products shut with tight-fitting lids. Continue to monitor for rodent activity through your professional pest control company.

Observation: Both display coolers (left & right) at a temperature of 12C. No food present in coolers.
Corrective Action(s): Adjust and/or service coolers so that they maintain 4C or less. Do not place any food products inside until a follow-up inspection has been conducted.

Comments

Routine inspection conducted. Kitchen currently not in operation due to malfunctioning fire suppression system. The following observations were made:

1. Temperatures
- Front display cooler (left & right) were measured at 12C (doors were shut for 30 minutes prior)
- Walk-in cooler at 2C
- Walk-in closet freezer at -18C
- Undercounter prep coolers all at 4C or less
- Hot-holding units not in operation at time of inspection
- Temperature logs currently not maintained. Ensure that the temperature logs, dishwasher logs, and sanitizer dispenser logs are maintained after the kitchen opens

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels in kitchen area
- D10 Detergent Sanitizer dispenser releases 200 ppm quaternary ammonium compound (QUATS)
- 2x spray bottles present throughout kitchen contain 200 ppm QUATS at time of inspection. Test strips available next to temperature log clipboard
- High-temperature dishwasher sanitizes at final rinse cycle of 75C at the plate (Min: 71C)
- Ice machine is in good sanitary condition - scoops stored above ice machine inside containers
- Dough mixer, meat slicer, blenders, mandolin are maintained in good sanitary condition
- Ventilation canopy well maintained

3. Storage
- All food products are well organized at least 6" off the floor
- Food products are generally covered when not in use - good
- Containers in dry storage are inside hard plastic containers with tight-fitted lids
- Home economics storage area is well maintained - food products stored inside are reserved for home economics use only and are separate from the kitchen cafeteria

4. Administrative
- Head chef has FoodSafe 1 (Expiry: April 18, 2023)

5. Pests
- Mechanical traps present and did not contain any rodents

Contact the Environmental Health Officer once the kitchen opens and when both display coolers consistently maintain 4C or less.
