Observation (CORRECTED DURING INSPECTION): Fridge #2 ambient temperature detected at 10.9C. Temperature probe monitored this unit for over an hour and temperature stayed in the dangerzone. Probed food product sour cream at 8.2C. Temperature log was not accurate and food was in danger zone for more than 2 hours. This will result potential bacteria/pathogen growth in food stored in this unit.
Corrective Action(s): Discard all potentially hazardous foods stored in Fridge #2 stored in the danger zone for more than 2 hours. Do not use this fridge unit for potentially hazardous foods until it can maintain 4C and below.

Premise is sanitary.
No signs of active pest activity at the time of inspection.
Pest control service and monitoring in place. Orkin Pest prevention in place.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Food and storage protected from contamination. Food storage stored 15 cm above the floor.
Prepared food is labelled, date stamped and sealed in food grade containers.
Ice machine is sanitary with dedicated hand scoop.
Temperature holding is adequate and in use with accurate thermometers.
Note: Temperature logs indicated some readings were taken in advance and is not accurate.
Inspection was conducted at 2:30 pm and the logs indicated readings were taken at 4 pm on the same day.
Ensure temperature readings are accurate and precise to when the reading was taken.

2-compartment sink in use. Quat sanitizer in use at 200 ppm in sani buckets and spray bottles.
Chemical testing and logs in use. All chemical sanitizers are labeled.
Dishwasher final rinse at 100 ppm chlorine at the plate. Sanitizer tested and logged and available for review.
Dining service area is sanitary with fully stocked hand sink.
Health Permit on display in kitchen.

Holding units:

Fridge #1 juice 4.0C, Fridge #3 3.9C dairy. Freezer compartment -18C and below.
Two chest freezers -15C and -19.7C.
No hot holding in use at the time of inspection.
Basement pantry, raw protein freezer and vegetable/cooked product freezer -15C and below.
