Observation:
Dough mixer in back storage area (near walk-in cooler and walk-in freezer) observed to be stored in an unsanitary condition.
Correction:
Clean and sanitize dough mixing bowl. Ensure to properly clean the outside of the machine as well. To be corrected today.

Observation:
No chlorine (bleach) sanitizer available in kitchen.
Correction:
Prepare a 100-200 ppm chlorine (bleach) sanitizer immediately. This can be prepared using 1 tsp bleach in 1 litre of water. TO BE CORRECTED IMMEDIATELY.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation:
1. No paper towels available at the kitchen hand washing station.
2. Liquid soap dispenser not functioning at the kitchen hand washing station.
3. No paper towels available at the front hand washing station.
Correction:
Ensure all hand washing stations are fully equipped with liquid soap, paper towels and hot/cold running water. Paper towels and liquid soap need to be stored in a dispensing unit. TO BE CORRECTED IMMEDIATELY.

Follow up inspection for AJON-CF2UBY on behalf of colleague
-Pest management company contacted; pest report dated June 15, 2022 reviewed. A copy of the report taken for record. No activity inside the premises noted. Thorough walk-through conducted for pest activity, no rodents droppings found. Significant cleaning completed.
-Extensive cleaning completed in the kitchen; between, under and behind equipment. Sanitation improved greatly. Fanhood canopy clean and in sanitary condition
-Shelves in the kitchen, walk-in cooler, and back storage area cleaned.
-Organization of the facility improved significantly. Work still required but overall satisfactory.
-Dough mixer is cleaned and in sanitary condition
-Two spray bottles (labelled) of bleach sanitizer available on site. Detected 200 ppm of residual chlorine.
-Door sweep and seals installed. Backdoor closed at the time of inspection
-No PHFs found at room temperature at the time of inspection
-Front sandwich cooler is now in good working order; detected 1.1 C when measured with thermometer for less than 5 mins.
-Slushi machine is now in repaired to good working order. No catch basin is used, waste water is draining properly.
-Paper towel and liquid soap available at the kitchen hand washing station.

Closure order is now rescinded, approval to re-open the kitchen granted.
**Ensure to maintain this level of sanitary conditions. Operator must update and follow the sanitation plan and food safety plan. If repeated violations are found on future inspections, stringent enforcement will be taken.**
