Observation (CORRECTED DURING INSPECTION): 1. Bleach sanitizer spray bottle contains >>> 200 ppm chlorine residual.
2. Dough mixer bowl is soiled with flour after use.
Corrective Action(s): 1. Sanitizer spray bottle was refilled with 200 ppm chlorine residual. Only half a capful of bleach is required per spray bottle - ensure that you use the correct amount of sanitizer - excessive amounts of chlorine in spray bottles are no longer food-grade and may chemically contaminate food.
2. Dough mixer bowl was cleaned-in-place at time of inspection. Ensure that the mixer bowl is cleaned after each use to upkeep it in sanitary condition

Observation: 1. Edges of rubber spatula has many frayed / chipped edges, which will contaminate food products if the pieces break off.
2. Lid of prep coolers covering cooling wells are both broken from the hinges.
Corrective Action(s): 1. Rubber spatula was discarded at time of inspection. Check the condition of all your implements to ensure that they are in good condition.
2. Repair the hinges so that the lid swivels up and down and shuts securely, preventing cold air from escaping.

Observation: Pizza warmer lacks an accurate thermometer.
Corrective Action(s): Obtain a thermometer for the pizza warmer to monitor ambient temperatures inside the hot-holder.

Comments

Routine inspection conducted. Facility is in very good sanitary condition. The following observations were made:

1. Temperatures (Max: 4C for coolers, -18C for freezers)
- Store stand-up coolers at 4C or below
- Chest freezers all at -18C or below
- Walk-in cooler at 3C
- Pizza prep cooler at 3C (Reminder: only have small amounts of food items inside the cooling wells so that the items can maintain temperature of 4C or less)
- Chafing dishes hot-held at 62C (Min: 60C)

2. Hygiene and Sanitizing
- Handwash stations in restroom and kitchen area adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- 3-compartment sink present for manual warewashing - operator aware of how to make a 200 ppm sanitizing solution in sanitizing compartment
- Utensils and ladles, meat slicers generally maintained in sanitary condition
- Cappuccino machines and slushie machines in store area are well maintained

3. Storage
- All food items elevated at least 6" off the floor
- Dry storage area is well organized, flour bags unopened and securely stored on the table
- Walk-in cooler is organized, expired products are placed in another container to be removed from the premise
- Chemicals and mop bucket are stored separately from food storage areas
- Take-out containers, cups are securely stored in original packaging inside cabinets or above working areas - good

4. Administrative
- Operator has FoodSafe 1 (expiry: 2022)
- Permit is posted in easily visible location to the public

5. Pest Control
- No recent pest activity noted at time of inspection
