Observation (CORRECTED DURING INSPECTION):
Observation #1: No bleach in sanitizer spray bottle. Refilled to have 100 ppm bleach (1/2 teaspoon per 1 L of water).
Observation #2: No bleach used at 2-compartment sink to sanitize dishware. No air drying station.
Corrective Action(s): Mixed up a 100 ppm bleach solution in spray bottle during inspection. All food contact surfaces must be sanitized with bleach AT LEAST every 4 hours (including meat slicer). Surfaces must be wiped in between meat species. *Must obtain chlorine test strips.

Comments

Routine inspection conducted. Found new, unapproved meat butchering station in back corner.

Meat/Butchering Station:
2-compartment sink with liquid detergent. Bleach obtained during inspection. The following procedure must be followed EVERY time equipment is cleaned: 1. Wash with warm soapy water 2. Rinse 3. Soak in 100 ppm bleach solution (1/2 teaspoon bleach per 1 L of water) 4. AIR DRY
No air drying station. Must have a shelving unit installed.
Nearest handwashing station is in the staff bathroom around the corner. Stocked with hot and cold running water, liquid soap and paper towel. Customers are excluded from this bathroom. No handsink in the meat butchering area.
Staff butchering are wearing gloves. Gloves must be CHANGED and hands must be WASHED between species and before and after using the bathroom
Eggs being sold in flats. Must provide receipt to confirm source. Graded?
Some meats stored in the walk-in cooler. Must keep SEPARATE from any produce (lower shelves or completely different shelves)
5 coolers in meat-butchering area
Meat-slicer appears in sanitary condition
Knives are stored in-between 2-compartment sink and wall. This is unacceptable as this area cannot be easily cleaned. Must obtain a magnet strip to store butchering knives on.

All freezers operating at less than or equal to -18 degrees Celsius
Back area getting unorganized, items stored on the floor. All foods must be stored at least 6" off the ground. Cannot confirm pest-free conditions at this time.
