306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The interior surfaces/parts of the ice machine has mildew/mold on them. This will contaminate the ice and possibly make people ill.
Corrective Action(s):
Turn off the machine, and empty all the ice out of the machine. Wash and sanitize the interior surfaces and parts of the ice machine to remove the mildew/mold. Have this done on a regular basis.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The waste pipe below the third sink (of the 3-comp sink) is leaking. Water and food is accumulating on the pipe and floor below, which is harboring pests.
2) The plastic sliding lid on the dry, baking ingredient bin is cracked. Pieces of plastic could fall into the food.
Corrective Action(s):
1) Repair or replace the leaking pipe, so water no longer leaks. Clean the water and food debris from the floor and pipes.

2) Discard all crack, chipped and/or damaged plastic containers and lids. Purchase new lids and containers.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -11C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- High temperature dishwasher rinse cycle was 75.9C at the plate's surface, as per max/min thermometer.
- All hand washing sinks have liquid soap, paper towels, and running hot and cold water.
- The hand washing sink by the 3-comp sink no longer constantly drips water from the faucet. The water completely turns off and on.
- Quats sanitizer in spray bottles was 200ppm.
- The first and second waste pipes (of the 3-comp sink) have been repaired and they no longer leak.
- Foods stored in food grade containers; covered; date coded; labeled; stored in groups; raw proteins stored below RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods for sale. FIFO rules being followed.
- Improvement observed in the sanitation level. General sanitation level is good.
- Dust accumulated on ceiling tiles around air diffusers and exhaust canopy. Chef explained that it will be cleaned tonight, and done once a month.
- No signs of pests.
- FoodSafe certified staff present.
- All surfaces are in good working order. Stainless steel tables and work tables are being used in cooking area (plastic milk crates no longer in use).
