Corrective Action(s): Please thoroughly clean and sanitize the blender. Violation Score: 5 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher measured at 0ppm chlorine after three tries. No solution dispensed from tube. Temperature log on the dishwasher has no date and indicate 100ppm on chlorine and iodine section. No sanitizer in the sushi bar area. Corrective Action(s): Dishwasher repaired at end of inspection, 50ppm chlorine dispensed. 100ppm chlorine sanitizer must be available in the food preparation area. Violation Score: 25 303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)] Observation: Hot water in handwash station by tempura station is pulsing with loud hammering sound. Possible water pressure issue. Corrective Action(s): Please repair so there is adequate hot and cold running water available. Technician arrived at end of inspection. Corrective Action(s): Store food 6 inches off the ground and never in washroom. Violation Score: 3 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Food debris noted on kitchen floor (between fridges, floor under stoves, fryer and sushi bar area) and grease build up on exhaust hood. Corrective Action(s): Please clean and sanitze all noted areas by follow up inspection. Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Low temperature dishwasher is dispensing 0ppm chlorine and hot water in handsink by tempura station is dispensing hot water improperly (water pulses and loud hammering sound). Paper towel dispenser in both men and women washroom are jammed. Corrective Action(s): Dishwasher repaired at end of inspection. Repair paper towel dispenser so it is functional. Violation Score: 3 312 - Items not required for food premises operation being stored on the premises [s. 18] Observation: Staff jacket, tooth bruth and toothpaste stored on the kitchen shelf.
