Observation: Dishwasher final rinse temperature only reaching 66c (At plate level). Must be a minimum of 71c at plate level.
Corrective Action(s): Dishwasher may be used to wash glassware. Once washed glassware is to soak for a minimum of 30 seconds in bleach at a concentration of 100ppm. Sink set up with bleach solution at time of inspection. Provided test strips to verify concentration.
Resanitize all glassware as discussed as it is unknown as to when the dishwasher stopped working properly..

Observation: Water temperature at the tap adjacent to the dishwasher tested at 150F. Dishwasher wash temperature gauge displaying 120F during wash cycle. Final rinse pressure gauge only displaying approx 5psi. Wash temperature, as per manufacturer's plate, should be 140 to 150F. .
Corrective Action(s): Contact technician to service the dishwasher. Final rinse pressure gauge may be out of calibration as it should be displaying approx 30psi when the final rinse begins. 30psi ensures the hot sanitizing water is dispersed evently onto all contact surfaces of the glassware during the final rinse cycle.

***Monitoring logs are not being maintained. Record daily, walk in cooler, sandwich cooler, final rinse temperature of the dishwasher as well as the wash water temperature. This demonstrates you are doing your due diligence especially in the event of a food borne illness complaint.
