Observation: A countertop deep-fryer was found onsite and was recently used in the back area where no ventilation canopy is present.
Corrective Action(s): Any cooking that causes production of grease-laden vapours must be done under your commercial ventilation canopy.
Any change to or addition of equipment must first be approved by Fraser Health. Relocate the countertop fryer to be under your existing ventilation canopy, and provide written confirmation from the fire department that use of this countertop fryer is okay under your canopy.

- Hand washing sinks were accessible/unobstructed and properly supplied with hot/cold running water, liquid soap, paper towels.
- Bleach sanitizer solution available at 100 ppm to 200 ppm (chlorine residual). **Ensure to label your spray bottle.
- Triple-sink available for manual warewashing maintained in sanitary conditions. Sink drain stoppers available for use.
- Food storage practices satisfactory.
- Dry storage area satisfactory.
- Coolers measured 4C or colder.
- Chest freezers were satisfactory.
- Hot-holding available at 60C or hotter.
- Secondary cook step is done for donair meats - good. Any leftover cones at end of day are shaved down and undergo a secondary cook step prior to cooling for cold storage. Good.
- Equipment and utensils maintained in sanitary conditions.
- General sanitation satisfactory.
- Pest control is in place. Pest control reports available onsite for review.
