Observation: Wall in additional drying room (towards front of building) has one wall that is constructed of unfinished drywall with plastered joints.
Corrective Action(s): Paint wall to make it easily cleanable and more durable. Due: 1 month

Observation: Large wooden table used to hold trays of baked goods has gaps between the wooden strips and food is building up between gaps. Food debris buildup can attract and harbor pests.
Corrective Action(s): Clean wooden table, paying particular attention to cleaning out gaps to cleaning out food between gaps, and seal/repair gaps to prevent future food buildup. Due: 2 weeks.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Chemical bottles at three compartment sink for detergent and sanitizer are switched so the labels on the dispenser are opposite and not accurate. Also no test strips available for sanitizer.
Corrective Action(s): Switch labels to reflect the chemicals contents and obtain test strips to monitor the sanitizer concentration.
