Routine inspection: Hand sink provided with liquid soap and paper towels. 200ppm quats dispensed from chemical dispensing station. 3 compartment sink setup for manual warewashing. 200ppm quats available for use in containers. Wiping cloths stored in solution when not in use. Walk in cooler at or below 4 degrees C. 2 door refrigeration unit, cooler at 4 degrees C. Freezer side at -15 degrees C. Monitor and ensure -18 degrees or less. Hot holding at or above 60 degrees C. Items in inserts at the preparation table labeled. Under the counter cooler at or below 4 degrees C.
