Observation (CORRECTED DURING INSPECTION): 1) Low temperature mechanical dishwasher maintaining 0 ppm chlorine concentration on multiple rinse cycles.
2) Employee seen drying dishes with single use paper towel for multiple dishes.
Corrective Action(s): 1) Refill sanitizer bottle to maintain 50-100 ppm chlorine sanitizer concentration
2) Employees must not dry dishes with towels and must allow them to air dry.
3) Monitor dishwasher daily to ensure proper sanitizer concentration is maintained.
