Observation (CORRECTED DURING INSPECTION): Dipper well not running. Scoops and spoons being stored in cloudy, standing water.
Corrective Action(s): Store in functioning dipper well, ice water, in product at appropriate temperature (frozen, refrigerated) or washed and sanitized after use. Staff washed and sanitized scoops and spoons and transferred to ice water. Replenish ice as it melts.

Observation (CORRECTED DURING INSPECTION): Two sanitizer buckets had quats sanitizer solution <50ppm and the water was very cloudy/dirty.
Corrective Action(s): Replace sanitizer according to frequency specified in Sanitation procedures. Solution must be changed when it becomes cloudy/dirty as the sanitizer will not be effective. Test solution with test strips to ensure level is 200ppm. Test strips present.

Observation: Mold growth noted on lower wall in dry storage room behind walk-in freezer. Wall (at floor/wall junction) is also deteriorating and there is no baseboard/coving present.
Corrective Action(s): Clean wall to remove mould growth. Repair damage to wall and replace baseboard/coving so this area can be maintained in a sanitary condition. Correction date: Oct. 20/17

Comments

-Handwashing sinks equipped with hot and cold running water, liquid soap and paper towel *Paper towel dispenser in women's staff washroom not feeding automatically and needs attention.
-Coolers were maintaining food at 4C or colder
-Food in walk-in cooler were stored in a manner to prevent contamination. Raw meats were stored below ready to eat items.
-Walk-in freezer temperature was -14C
-Dishwasher met sanitizing requirements. 50ppm chlorine detected on dish after dishwasher cycle.
-Bin of ice machine appears in sanitary condition.
-Hot holding of soups, sauces, mashed potatoes was >60C
-Dipper wells near hot holding station in good working order.
-Quats sanitizer present at 200ppm. Solution in buckets was replenished at the time of the inspection. Ensure food contact surfaces (eg. cutting boards) are sanitized at a minimum every 4 hours or more frequently if specified by sanitation procedures.
-No signs of pest activity noted at the time of the inspection. Pest Control contract in place with monthly service. *2 holes noted in wall underneath pot sinks. Fill holes to prevent pest entry/harbourage. If access to pipes is needed, steel wool may be suitable.
*Baseboard loose around exterior of walk-in cooler. Base of wall is deteriorating significantly. Repair wall and replace baseboards. All surfaces must be smooth, washable and should facilitate cleaning.
