Observation (CORRECTED DURING INSPECTION): Manual warewashing procedures were incorrect. Premises was performing warewashing in the following steps: wash, sanitize, rinse, air dry.
Corrective Action(s): Discussed with staff on site, manual warewashing must be conducted in the following way:
1) Wash with soap
2) Rinse with clean water
3) Sanitize for at least 2 minutes
4) Air dry

> Running hot and cold water is available.
> Handsink is supplied with liquid soap and paper towels.
> 3 compartment sink available for warewashing. 50ppm bleach solution measured in the sanitizer compartment.
> 200ppm QUATS solution available for surface sanitizing. Please do not mix chemicals.
> Chest freezers measured -18C or colder.
> Walk-in freezer measured -22C.
> Walk-in cooler measured 4C. One walk-in cooler closest to bay door is not in use.
> Hot water dipper well is in use. Water is changed regularly.
> General sanitation is good.
> FOODSAFE requirements met.
> Health permit is posted.

Note: observed ONE mouse dropping in the back room next to the chest freezer. Did not observe any other signs of pest activity.
