Observation (CORRECTED DURING INSPECTION): Condiments in the prep cooler (closest to the warewashing area) ranged from 5C to 10C. This is a continuing violation.
Corrective Action(s): Cold potentially hazardous foods must be stored at or below 4C on a consistent basis to prevent potential growth of pathogens. Cooler unit must either be serviced or time tracking can be used as a control measure. Time must be tracked when the food was placed on the line and after 2 hours, the product must be used or discarded.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -18C.
-Burger cooler was at 4C.
-Under counter coolers were at or below 4C.
-Frosty hopper was at 0C (vanilla hopper not in use).
-Under counter fry freezer was at -3C.
-Upright freezer was at -16C.
-Hot holding was greater than 60C.
-Chicken was cooked to greater than 74C and beef was cooked to greater than 71C.
-Chicken nuggets and chicken strips discarded every 30 minutes.
-Temperatures checked and recorded daily.
-Frozen foods thawed in the walk-in cooler.
-3-compartment sink used for warewashing. Quats sanitizing solution was tested at 200ppm.
-Quats sanitizer pails were tested at 200ppm. Solution is changed every hour.
-Ice machine clean and well maintained.
-Equipment sanitation satisfactory.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. Raw meats stored separately from ready-to-eat foods.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator on a monthly basis. No signs of pests noted at the time of inspection.
-Washroom clean and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Manager has FOODSAFE Level 1 equivalent training. Valid until December 30, 2021.
