Observation: Numerous uncovered foods observed in walk-in cooler and prep cooler in kitchen.
Corrective Action(s): Ensure to have all foods properly covered to protect them from contamination at all times.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) One of the prep coolers requires a repair. No foods stored in the unit at this time. Facility is waiting for parts to arrive for a full repair.
2) Handwashing station in kitchen requires a reseal along the left wall.
Corrective Action(s): Ensure to have the cooler repaired and contact the health inspector to notify. Ensure to reseal the area as discussed at this time.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating below required temperature of 4'C; Freezers operating below required temperature of -18'C.
-200ppm chlorine solution prepared in a bucket to hold wiping cloths.
NOTE: Ensure to have 100-200ppm chlorine solution prepared for the front area as well. (i.e. labelled spray bottle)
-Low temperature dishwasher achieved minimum level of chlorine (50ppm) at plate level after final rinse.
-Ventilation canopy hood serviced and maintained.
-No evidence of pest activity observed.
-Washroom handsink satisfactory.

General sanitation of the facility satisfactory at this time. Improvement observed from the last routine inspection. Good!

Please contact the health inspector one the cooler is repaired. Follow-up inspection to be conducted at that time.
