209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Cooked samosas stored in an open cardboard box in one of the kitchen reach-in cooler.
2. Multiple containers of food stored unprotected in the reach-in coolers in the kitchen area and in the refrigerator in the dry storage room.
Corrective Action(s): 1. **Issue corrected at the time of inspection** Cooked samosas were transferred to a food-grade container during the inspection.
Do not store any processed, washed or cooked food in cardboard boxes as it is not made of a material that can be easily cleanable and may contain debris or chemicals that could be transferred to the food it's holding.
2. Wrap or place a lid over all exposed food in all refrigeration units throughout the premises. All food must be stored protected with a lid or plastic wrap to avoid potential cross-contamination of food.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Grease noted along the edge of the fume hood.
2. Dried on food soil noted on the wall nearby the cookline and microwave units.
3. Small amount of droppings noted on the floor below the dishwashing area. Note: Significant improvement from last routine inspection as no droppings were observed elsewhere.
Corrective Action(s): 1. As per operator, the fume hood was just cleaned last week. Due to the size and volume of the kitchen, consider increasing the cleaning frequency of the fume hood to twice a day or even daily if necessary to avoid dripping grease into the food being cooked below.
2. Clean the wall noted with dried on food soil.
3. Clean and sanitize the floor noted with droppings. This will help with monitoring potential pest issue to see if issue has returned.

Observation: New 2-door reach-in cooler has been purchased and replaced a prep table in the kitchen without prior Fraser Health approval.
Corrective Action(s): Submit updated floor plan with new reach-in cooler.
Any addition/ removal or change in layout of equipment must be submitted to Fraser Health for approval prior to changes being made.

Routine inspection conducted today:
Handwash stations, including restrooms, were equipped with hot and cold running water, liquid soap and paper towel.
All designated handwash sinks must be accessible at all time. Cannot be used for food preparation even during non-busy time.
Sink and Surface Cleaner Sanitizer (2 containers were set-up) available and at the correct concentration.
All refrigerator units were at ≤ 4C.
All freezer units were at ≤ -18C.
Food in the hot hold units (2 units) were noted > 60C.
Must ensure food is cooked to the required cooking temperature before placing in a hot hold unit. Do not cool down the food and place in a hot hold unit expecting it to bring up the temperature to 60C or more.
Did not observe improper dispensers stored within bulk food containers.
High temperature dish machine noted at 72.8C at the plate level.
Significant improvements noted on the general cleanliness of the facility overall.
Improvements noted on the pest issues overall - as per operator, an external pest control company comes in once a month for inspection.
