Observation: Cardboard boxes are being used for storage of plastic containers. Do not use cardboard as it cannot be cleaned and is easily soiled by grease. Replace with plastic totes that are easily cleanable and do not line with plastic wrap.

General Comments
-Handwash stations stocked with hot and cold running water, liquid soap and paper towels.
-Time and temperature tracking for foods held at room temperature and following all conditions.
-Ensure proper cooling procedures are followed:
1) 60 deg. C --> 20 deg. C in 2 hrs or less at room temperature
-use an ice wand or ice bath to quicken cooling.
2) 20 deg. C --> 4 deg. C in 4 hrs or less in a cooler.
-No signs of pests during time of inspection
-Temperature logs kept to date
-General sanitation is satisfactory.
