Observation: Utensils/dishes washed in low temp mechanical dihshwasher were not adequately sanitized as no chlorine residual was detected during rinse cycle of the dishwasher. Facility does not have 2 or 3 compartment dishwashing sink to conduct manual dishwashing.
Corrective Action(s): Run all food contact surfaces through dishwasher to ensure that they are adequately washed, sanitized and air dried.

Observation (CORRECTED DURING INSPECTION): No chlorine residual detected during rinse cycle of low temp mechanical dishwasher. Staff primed the dishwasher and 200ppm chlorine residual measured. Manager stated that the technician has been called for service.

Comments

Routine inspection conducted at the facility.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Coolers were maintained at 4C or less
- Freezers noted at -18C or less
- Hot holding units recorded above 60C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Date and time stamps were observed on food containers.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pail available and the concentration of QUATS noted at 200ppm.
- Low temp mechanical dishwasher used for ware washing. See violation above.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate (April 2023).

Manager stated that the facility had undergone renovations 3 years ago and removed the 2 compartment dishwashing sink. Please note that the facility would require both low temp mechanical dishwasher AND a 2- or 3- compartment dishwashing sink. District EHO will verify the approved floor plan and contact Manager regarding future actions.
