Observation: The sandwich preparation fridge temperatures measure 14 C. Temperatures must be maintained below 4 C. The 'outside cooler' (milk and drinks) temperatures measure 14 C. The plastic sliding door is damaged and is not in use.
Corrective Action(s): A service technician has been called and parts are on order. Ice is presently being used to bring temperatures down. The sliding door on the 'outside cooler' is presently being repaired.

Hot-holding measures > 60 C. Spray sanitizer measures 200 ppm Q. Wiping cloth sanitizer measures 200 ppm Q. Pot sink sanitizer measures 300 ppm Q.
Dishwasher cavity final rinse temperature measures 74 C. No recommendations.
