- sanitizer measured 200ppm quats at dispenser
- be aware of air bubbles building up in tubing (can affect concentration)
- foods date labelled to facilitate FIFO
- gluten free crusts stored up and above other foods
- no obvious signs of pests; professional pest report reviewed, no activity noted
- FOODSAFE requirements met
- general sanitation is satisfactory

Note: staff state that cutting table is new, and that facility will install new oven in the same spot as current oven - no objections

- prep cooler: 4C; ensure lid is closed when not busy to maintain temperature

- hot holding table measured 54C - only to maintain temperature until delivery or pick-up, not for selling by slice; ensure pizza is delivered to, or picked up by customer within 2 hours
