Comments

- Food premises maintained in sanitary condition.
- Hot and cold running water supplied to all sinks
- Liquid soap and paper towel present for handwashing in staff washroom and at handsink within cutting/packaging area
- All coolers and freezers were operational:
- Single door reach in cooler 3C
- Beverage cooler 4C
- Display cooler (top) 4C, freezer (bottom) -15C
- 2 door stainless reach in freezer -18C
- Reach in glass door coolers -15C, -5C - appears to be on defrost. Product remains in frozen state. Monitor to ensure temperature decreases.
- Single door reach in freezer -16C
- Bleach sanitizer solution (200ppm chlorine) present in spray bottle for sanitizing food contact surfaces. Label spray bottle to indicate contents.
- In use wiping cloth kept in bleach sanitizer solution (200ppm chlorine)
- 2 compartment sink used for manual dishwashing for cutting board, slicing equipment. Plugs present for sinks to be filled. Manual dishwashing sign posted.
- Operator knowledgeable about manual dishwashing procedures.
- Operator reports meat products are supplied by Meadow Valley Meats and received frozen. Meat products are portioned/packaged and sold frozen only. Recommend labelling products with packed on date for items packaged in premises.

Food premises approval is limited to retail food store with limited cutting and portioning of raw meat products only. No food preparation or cooking is permitted. All products must be from an approved source. Ensure product labelling is in compliance with CFIA requirements.

Observations and corrective action reviewed with Operator and a copy of the report was provided.
