Observation (CORRECTED DURING INSPECTION): 3 compartment sink - sanitizing compartment 50 ppm chlorine
Corrective Action(s): Increase chlorine to 100 ppm, which is adequate residual for manual dishwashing, sanitizing step.

Bleach in use as sanitizer while premise awaits additional inventory of Quaternary Ammonia for automated feeder from supplier.

Observation: Mouse droppings in the following locations: floor corner around piping behind two storage cabinets, underneath beverage dispenser, inside recycling cabinet, left lower shelf under pizza display (re-install door to limit pest entry) and on floor in corner around safe.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
