Observation (CORRECTED DURING INSPECTION): Discussed sanitizing steps with staff member, was told that dishes are only washed with soap & water and that counters are wiped down with water
Corrective Action(s): Ensure all staff members are educated on Sanitation Plan & that signage on walls properly reflects these steps

All dishes must be sanitized (cuttingboards, knives, etc.) after use.
1. Wash with soap & water in sink
2. Rinse off soap
3. Soak dishes in sink full of 100ppm Cl sanitizing solution (1 tbsp bleach for 4 L water) for 2 MINUTES.
4. Air dry at dish rack.

Ensure all counters are sanitized with 100ppm Cl solution (1 tbsp bleach for 4L water) prior to cutting.

Observation: 1.Bins of fruit & veg stored half under roof so that runoff from roof water is dripping all onto fruit & veg
2. Observed cut vegetables stored in cardboard boxes
Corrective Action(s): 1. Move bins so that fruit & veg are stored fully UNDER roof to prevent runoff from dripping onto fruit & veg
2. Ensure cut vegetables are stored in bins that are washable (i.e. plastic totes).
