Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Pink mildew noted along upper edges of ice machine. Ice scoop stored inside machine with handle touching ice. This can contaminate the ice.
Correction: Discard ice. Clean and sanitize machine. Ensure ice machine is regularly cleaned as per your Sanitation Plan.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
1) Sanitizer did not have any measurable chlorine or quats.
2) Staff indicated a certain bottle was meant for sanitizer but did not know that it required dilution.
3) Dishwasher did not reach 71C or hotter at final rinse cycle.
4) In-use utensils are rinsed in handwashing station and placed back in bucket of ice water; utensils only washed at the end of the night.
Correction:
1) Sanitizer must measure 100-200ppm chlorine OR 200-400ppm quats. Test strips available.
2) Staff need training on what chemicals are used for which purpose.
3) Dishwasher must reach 71C or hotter at final rinse cycle.
4) In-use utensils must be washed, rinsed and sanitized every four hours. In between washes, utensils must be stored in ice-water.
