203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): A large amount of rice was found cooling in a deep plastic container.
Corrective Action(s): The container of rice was found in the walk-in cooler and the rice was found to be 30-35 degrees Celsius. Instructed operator to transfer the rice into two stainless steel, shallow pans to help the rice cool more rapidly. Hot foods shall be cooled as quickly as possible using shallow metal containers and smaller portions. Once foods have cooled down to about room temperature, should they be transferred to a cooler.

Observation (CORRECTED DURING INSPECTION): Containers holding sanitizer for in-use wiping cloths were to small.
Corrective Action(s): In-use wiping cloths must be completely submerged in sanitizer in-between uses, therefore the containers must be large enough to acomplish this task. Instructed operator to change to large containers for both the servery and kitchen work areas.

Observation: Mouse droppings found on a shelf in the upstairs storage locker.
Corrective Action(s): Clean up droppings and disinfect the affected area. No mouse droppings were found anywhere else.

Observation (CORRECTED DURING INSPECTION): Plastic container that was used for cooling rice was damaged.
Corrective Action(s): Damaged utensils must be discarded as they cannot be effectively cleaned and sanitized. Instructed operator to discard the container.

Discussed with operator to monitor the food temperature ensure they care maintained at 60 degrees Celsius or more.

Organization of storage areas was satisfactory.
Hand sinks stocked with liquid soap and paper towels.

Food handler hygiene and food handling practices were satisfactory.
