Observation:
The floor in the kimchi processing room is damaged, the flooring material is chipped, dented, peeling and/or missing in areas, and it is not sealed or cleanable. This will attract pests and may cause sanitation concerns.
Corrective Action(s):
Repair or replace all areas of damaged flooring, so that the floor in durable, smooth, level, sealed, made of food grade material, and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Raw ingredient walk-in-cooler was 1C; finished product walk-in-cooler was 1C; thermometers present; and temperatures recorded daily.
- All foods stored 6" off the floor on pallets, racks or shelves.
- No expired foods in use. FIFO rules being followed.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Boot bath present at entry into the kimchi processing room. The bleach solution has [Cl2] of 200ppm, test strips present. Ensure the bleach solution is checked periodically in the day to ensure the strength remains at 200ppm.
- 3-compartment sink uses Quats sanitizer for dishwashing. Quats strength was 200ppm.
- General sanitation level is good. The warehouse portion of the facility also has good sanitation.
- No signs of pests. Orkin Pest Company monitors twice a month.
- Renovations to occur to the warehouse portion. The neighboring business (Manna International) is expanding into the space, but removal of the joining wall and moving it over. During the construction, a large plastic sheet will be placed from the ceiling to the floor to exclude construction debris and dust. As well, the kimchi processing room is a fully enclosed room.
- HACCP program implemented in the facility, but not certified.
